Our pasta rocks. I know. That is exactly the kind of thing I would say. But still! It’s true. We eat this pasta a LOT, and it is great. We make it from a blend of our local flours and a little organic semolina, and we shape it using one of our very cool old Italian pasta machines. You try. You will like.
We make fettuccine and conchiglie (shells) in various flavors such as black pepper, berbere, thyme, tomato, and - our speciality - sourdough. Other flavors vary by season and the creative spirit of our pasta maker.
Our pasta is mixed, kneaded, rolled, cut, and hung to dry in the bakery. From start to finish each batch is made by hand, and takes days to make!
The pasta we make is made of Organic Durum Semolina, Organic or Transitional Roller-Milled Wheat Flour, Farmer Ground Organic High-Extraction Wheat Flour, and Farmer Ground Organic Whole Spelt flour.
